Maitake Mushroom

 

Grifola frondosa known in Japan as Maitake, meaning “dancing mushroom,” this revered fungus has been celebrated for centuries. Legend tells that foragers would dance with joy upon finding it in the wild — not only for its abundance but for its extraordinary vitality.

Maitake grows at the base of oaks and other hardwoods in cool, temperate forests, forming large, feather-like clusters that can span the size of a human torso. Its earthy aroma and rich umami flavour made it a culinary treasure .

Today, Maitake is studied for its potential ability to support overall wellbeing. Its potency lies in its array of bioactive compounds: fungal beta-glucans, ergothioneine and phenolic antioxidants. Besides B-vitamins, copper and potassium.
